Sherry's Sausage & Pepper Pasta

what you need
  • 8 oz. whole wheat rigatoni pasta
  • 8 oz. sweet Italian turkey sausages
  • 1 red and 1 green pepper, cut into strips
  • 1 cup thinly sliced red onion
  • 1-1/2 tsp. dried Italian seasonings
  • 1/4 tsp. salt
  • 1/2 cup Kraft Creamy Caesar Dressing
  • 1 Tbsp. fresh chopped parsley
  • 2 Tbsp. Kraft Reduced-Fat Grated Parmesan Cheese

Cook pasta as directed, drain well, reserve 1/2 cup cooking water.

In lg skillet, sprayed with cooking spray, cook sausage over med-high heat until browned on all sides. Reduced heat to med-low, cover, cook until no longer pink, about 15 min.

Remove sausage to cutting board, diagonally cut sausage into thick slices. Discard all but 1 Tbsp. drippings from skillet. Add to skillet, peppers, onion, seasoning and salt. Cook over med heat, stir occasionally until just tender, about 15 min.

Remove from heat, stir in pasta, dressing, reserved pasta water and sausage. Serve sprinkled with parsley and parmesan cheese.
A healthy, yummy quick dish for lunch or dinner. Kids seem to love this dish.
