Sherry's Broccoli Cream Soup

what you need
  • 2 cups chopped onion
  • 1 lb. frozen broccoli florets
  • 1 can (14 oz.) fat-free chicken broth
  • 6 Tbsp. Kraft reduced-fat cream cheese
  • 1 cup fat-free milk
  • 1/4 tsp. red pepper
  • 3/4 tsp. salt
  • 1/3 cup finely chopped green onions, white and dark green parts
make it
Place Dutch oven over med-high heat until hot. Spray with cooking spray. Add onions, spray onions with cooking spray. Cook for 4 min or until translucent, stir frequently.

Add broccoli & broth, Bring to boil over high heat, reduce to simmer, cover, simmer 10 min or until broccoli is tender.

In blender, puree broccoli mix, 1 cup at a time. Return soup to pan over med heat. Whisk in cream cheese until melted, stir in milk, red pepper and salt. Cook 2 min or until heated through. Top each serving with green onions.
Notes
A nice warming soup. Very healthy.
