Sherry's Low-Fat Cheesy Spinach Dip

what you need
- 2 Tbsp. butter
- 1/4 cup chopped onion
- 1-1/2 tsp. minced garlic
- 1 Tbsp. flour
- 1-3/4 cups fat-free half-and-half
- 2 pkg. (9 oz. each) chopped spinach, well drained
- 1 can (8 oz.) chopped water chestnuts, drained
- 1 cup Kraft Reduced-Fat Shredded Cheddar Cheese
- 1 pkg. (1 oz.) dry veggie soup mix
- 1/4 cup Kraft Reduced-Fat Parmesan Cheese

Melt butter in skillet, add onion and garlic cook 2-3 min. Stir in flour, cook and stir 1 min. Add half-and-half. Stir constantly until it boils and thickens, 2 min.
Remove from heat, stir in spinach, water chestnuts, cheddar cheese and veggie soup mix.
Spoon into a 1-quart baking dish that has been sprayed with cooking spray. Sprinkle with parmesan cheese.
Bake at 425°F for 10-15 min or until bubbly.
