Sherry's Fall-Flavored Apple Smoked Pork Chops

what you need
- 4 lean, bone-in pork chops
- 1/2 lb. apple-smoked bacon
- Salt and pepper to taste
- 1 lg granny smith apple
- 1 cup apple cider
- 1 tsp. butter

Preheat oven to 350°F. Wrap each pork chop with 2-3 bacon slices. Season with salt and pepper. Spray a baking sheet with cooking spray. Lay pork chops on baking sheet.
Cook for 15-20 min. Bacon should be crisp.
Serve with glaze: Dice the apple. In small skillet, sprayed with cooking spray, put pan over med heat, saute diced apple, add cider, reduce by 1/2. Add butter, pour over cooked chops.
Notes
These remind me of fall with the apple bacon and apple glaze. I serve this with mashed sweet potatoes. The potatoes are perfect for this dish.
