Sherry's Chill-Chasing Corn Chowder - Slow Cooker Style

what you need
  • 2 cans (14-1/2 oz. each) fat-free chicken broth
  • 1 bag (16 oz.) frozen corn
  • 3 small red potatoes, peeled, cut into 1/2- inch pieces
  • 1 red bell pepper, diced
  • 1 lg onion, diced
  • 1 celery rib, sliced
  • 1/2 tsp. each of salt & pepper
  • 1/4 tsp. ground coriander
  • 1/2 cup light cream
  • 8 slices Oscar Mayer Bacon, crisp-cooked and crumbled
make it
Place broth, corn, potatoes, bell pepper, onion, celery, salt, pepper and coriander into slow cooker.

Cover, cook on low for 7-8 hrs.

Partially mash soup mix with masher to thicken. Stir in cream, cook on high, uncovered until hot. Garnish with bacon.
Notes
I serve this chowder with cornbread, It makes quite a meal on a cold night.
