Sherry's Hearty Ham and Lentil Soup

what you need
  • 1 cup brown lentils, rinsed & drained
  • 1 cup chopped celery
  • 1 cup sliced carrots
  • 1/2 cup chopped onion
  • 4 cups water
  • 1-1/2 tsp. instant chicken bouillon granule 1/2 tsp. lemon peel
  • 1/4 tsp. cayenne pepper
  • 2 minced garlic cloves
  • 1 cup Oscar Mayer 96% Fat-Free Ham, chopped
  • 2 cups fresh chopped spinach
make it
In a 3-1/2-4 quart slow cooker, combine lentils, celery, carrots and onion.

Stir in water, bouillon, lemon peel, cayenne pepper and garlic.

Cover, cook on low for 7-8 hrs, or on high for 3-1/2-4 hrs. If using low-setting, turn to high, add ham for the last 10 min. Stir in spinach.
Notes
A very filling, hearty soup that'll get you warm in no time. I serve with biscuits, homemade or frozen.
