what you need
- 4 slices Oscar Mayer lower-salt bacon
- 2 cups small red potatoes, cut into 1/2" pieces
- 1 cup frozen pepper stir fry mix, thawed, drained
- 1 can (12 oz.) fat-free evaporated milk
- Salt & pepper
- 1 pkg. (9 oz.) frozen tortellini
- 1 scallion, sliced

In medium-sized cooking pot (sprayed with cooking spray) over medium heat, cook bacon until crisp, drain on paper towels.
To drippings in pan, add potatoes & pepper stir-fry. Cook, stirring occasionally, until potatoes start to soften.
Stir in 1-1/2 cups water, evaporated milk and salt & pepper to taste. Bring to a boil, add tortellini, and cook until tender, about 8-10 min. Remove from heat, stir in scallion. Serve sprinkled with crumbled bacon.
Notes
Quick, filling chowder for when you don't have much time to cook. You can use fresh assorted peppers if you like.
