Sherry's Creamy, Chunky, Low Fat Potato-Broccoli Soup

what you need
- 3 cups peeled, cubed potatoes
- 1 cup chopped frozen broccoli, thawed
- 1/2 cup chopped carrot
- 1/2 cup water
- 1/4 tsp. salt
- 1 can (14-1/4 oz.) fat-free chicken broth
- 1-1/2 cups 1% milk
- 3 Tbsp. all purpose flour
- 6 oz. Kraft Light Velveeta Cheese, cubed

Combine first 6 ingredients in large pot. Bring to boil, reduce heat, simmer 20 min.
Combine milk and flour. Stir until smooth. Add milk mix and cheese to veggie mix in pot.
Cook over med heat, stirring constantly, until cheese melts and mixture thickens. Serve immediately.
Notes
Great to make a day ahead for lunch the following day. Serving size is 1 cup.
