Sherry's Holiday Chocolate-Mint Cookies

Makes: 2-1/2 dozen Total Time: 25 min

what you need
  • 1-3/4 cups all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1 large egg
  • 2 tsp. vanilla
  • 1/2 cup milk chocolate morsels
  • 1/2 cup semi-sweet morsels
  • 3 oz. mint chocolate candy bar, chopped
make it
Preheat oven to 350°F. Lay parchment paper on large baking sheet. Combine first 4 ingredients, set aside. Beat butter at medium speed with mixer for 3 min. Add sugar, beat 3 minutes or until light & fluffy. Add egg and vanilla, beating until well blended. Add flour mix to butter mix, beat well. Stir in morsels and chopped mint chocolate.

Drop by heaping tablespoonfuls on parchment paper on baking sheet.

Bake for 10-12 min or until light golden brown. Remove cookies to wire racks. Cool completely.
