what you need
- 8 oz. sweet Italian turkey sausage, crumbled
- 2 ribs celery, chopped
- 2 small onions, chopped
- 3 cloves garlic, chopped
- 1/4 tsp. each salt & pepper
- 1 tsp. dried thyme
- 4 Tbsp. butter
- 1 loaf (14 oz.) French bread, cut into 1/2" pieces
- 2 pkg. (10 oz. each) frozen, diced butternut squash
- 2-1/2 cups fat-free chicken broth
- 1 tsp. dried parsley

Preheat oven to 350°F. Coat a 13 x 9" baking dish with cooking spray. Spray a large skillet with cooking spray, heat over med heat. Add sausage, celery, onion, garlic, salt and pepper. Cook, stirring occasionally until sausage is no longer pink. Remove from heat, stir in thyme. Melt butter.
In bowl, combine bread, squash, broth, sausage mix and melted butter. Toss until liquid is absorbed. Transfer to baking dish. Dot with remaining 2 Tbsp. butter, cover.
Bake for 40 min. Uncover and bake until hot, another 30 min. Cool for 10 min, sprinkle with parsley.
