Sherry's Salisbury Surprise Steaks

what you need
  • 1 lb. extra-lean ground beef
  • 1/4 cup crushed unsalted saltine crackers, about 8 crackers
  • 1 Tbsp. Worcestershire sauce
  • 1/4 tsp. pepper
  • 4 sticks Kraft Cheddar or Mozzarella Cheese, about 1-inch thick
  • 1 Tbsp. butter
  • 1 can (10-1/2 oz.) fat free beef broth
  • 1/2 can water
  • 1 large onion, sliced
  • 1 Tbsp. cornstarch
  • 1 small red pepper, cut into rings, for garnish

In medium bowl, mix lightly, but thoroughly beef, cracker crumbs, Worcestershire sauce and pepper. Shape into oval patties. Enclose 1 cheese stick in center of each patty, covering cheese completely and tightly.

Brown patties in butter in skillet over med heat.

In another large skillet, bring broth and water to a boil. Add patties, surround with onions. Cover, simmer over low heat for 20 minutes, and remove meat. Blend cornstarch with a small amount of water, stir into skillet. Cook, stirring until thickened. Add meat patties and heat through, garnish with red pepper rings.
Children love to help make these and they love the "surprise" middle of gooey cheese.
