what you need
  • 5 medium potatoes, peeled and diced
  • SAUCE:
  • 2 Tbsp. butter
  • 2 chopped red onions
  • 2 Tbsp. all-purpose flour
  • 1/2 tsp. each salt and pepper
  • 1 cup light cream
  • 1 Tbsp. Grey Poupon Mustard
  • 1/2 cup Kraft Mayonnaise
  • 4 slices Oscar Mayer Bacon, cooked and crumbled
  • 1 tsp. dried thyme

Cover potatoes with boiling salted water, bring back to boil. Cover, simmer for 15 min. Drain, set aside.

Melt butter in large saucepan, add onions. Saute over medium heat until soft. Sprinkle with flour. Add salt and pepper. Slowly add light cream, cooking, stirring constantly until sauce thickens. Remove from heat, cool slightly. Add mustard and mayonnaise. Stir until well blended. The sauce should be thick and creamy.

Spray a 1-1/2 quart casserole dish with cooking spray. Turn potatoes into casserole dish, cover with sauce. Bake at 350°F for about 30 min. Sprinkle with crumbled bacon and dried thyme.
Notes
Wonderful side dish for any entree.
