Sherry's Slow-Cooker Chicken Wings with Peanut Sauce

- 2-1/4 lb. chicken wing drummettes (about 24
- 1/4 cup water
- 1 Tbsp. lemon or lime juice
- 1/4 tsp. ground ginger
- PEANUT SAUCE:
- 1/2 cup reduced-fat creamy peanut butter
- 1/2 cup water
- 2 Tbsp. lo-sodium soy sauce
- 2 minced garlic cloves
- 1/2 tsp. ground ginger
- 1/4 tsp. crushed red pepper
- 1/4 cup sesame seeds

Place chicken in a 4-quart slow-cooker. Add the water, lemon or lime juice and ginger to cooker. Cover, cook on low setting for 5-6 hrs, or on high setting for 2-1/2 -3 hrs. Drain chicken, discard liquid.
Make peanut sauce: In small pan, whisk together the peanut butter, water, soy sauce, garlic, ginger and red pepper. Heat over med-low heat until mix is smooth, whisking constantly.
Toss chicken with half of the peanut sauce. Return chicken to cooker. Keep on low for up to an hour. Serve with remaining sauce, sprinkling with sesame seeds right before serving.
