Sherry's Vegetable-Cheese Bake

what you need
  • 2 pkg. (10 oz. each) frozen mixed veggies; broccoli, carrots, cauliflower
  • 1/2 cup boiling water
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1-1/2 cups fat-free milk
  • 1/2 cup Kraft Shredded Cheddar Cheese
  • 1/4 tsp. each of salt and pepper
  • 1/2 cup chopped green onions
make it
Preheat oven to 350°F. Spray a 1-quart baking dish with cooking spray. In saucepan combine frozen veggies and boiling water. Bring to boil again, cover, simmer 5 min. Drain well.

In another pan, melt butter, blend in flour, cook 1 min. Gradually stir in milk. Simmer, stirring, until smooth and thickened. Add cheese and seasonings. Mix in veggies and onions. Spread into casserole dish.

Bake for 30 min or until bubbly.
Notes
Very warm, inviting dish that goes well with baked chicken. I used to make this for my daughter when she wouldn't eat her veggies. She would eat them made like this.
