Sherry's Mac-N-Cheese with Bacon & Tomato

what you need
- 12 oz. penne pasta
- 8 slices Oscar Mayer lo-sodium bacon
- 2 Tbsp. butter
- 1/4 cup all-purpose flour
- 2 tsp. mustard powder
- 3 cups fat-free milk
- 3 cups Kraft Cheddar Classic Melts-12 oz.
- 1-1/2 cups halved grape tomatoes
- 1/3 cup panko bread crumbs

Preheat oven to 400°F. Coat a 2-1/2 quart baking dish with cooking spray. Cook pasta as directed, drain, return to pot.
In large skillet, cook bacon over medium heat until crisp, drain on paper towels. In drippings in skillet, melt butter over medium heat. Whisk in flour & mustard powder until smooth. Whisk in milk, cook, whisking constantly until thickened and bubbly. Whisk in cheese until melted & smooth. Stir cheese sauce into pasta until fully coated. Crumble 6 slices bacon, stir bacon and tomato halves into pasta.
Transfer to baking dish. Break remaining bacon into small pieces, sprinkle over pasta. Sprinkle evenly with bread crumbs. Bake until golden and bubbly, about 5-10 minutes.

Fairly quick and easy to make. My friends swear this is the best mac-n-cheese they've ever had.
