Dad's Farm-Style Pot Roast

what you need
- 4 lb. boneless rump roast, trimmed
- 1 green pepper, chopped
- 1 onion, coarsely chopped
- 1 cup ketchup
- 1 Tbsp. Grey Poupon Mustard
- 1 tsp. celery seed
- 3 Tbsp. brown sugar
- 2 Tbsp. lemon juice
- 1/2 tsp. each salt and pepper
- 1/2 cup fat-free beef broth
- 4 large potatoes, peeled and diced

Preheat oven to 350°F. Place pot roast in 9-by-13-inch pan. Add green pepper and onion.
Combine in bowl, ketchup, mustard, celery seed, brown sugar, lemon juice, salt and pepper. Add beef broth and mix. Pour mix over roast and veggies in pan. Cover pan with foil.
Bake for 2 hours or until roast is fork tender. Add potatoes to pan. Bake another 30-40 min.
Notes
My dad would start this mid-morning so that it would be ready for Sunday Dinner. It was always so delicious!
