Sherry's Festive Holiday Salad

what you need
- 3/4 cup tomatoes, diced
- 3/4 cup yellow bell pepper, diced
- 3/4 cup cucumber, peeled and diced
- 1/3 cup radishes, trimmed and diced
- 1/3 cup red onion, diced
- 1 small head of red cabbage
- 1 Tbsp. each chopped fresh chives and parsley for garnish
- VINAIGRETTE:
- 3 Tbsp. Grey Poupon Mustard
- 4 Tbsp. tarragon flavored white wine vinegar
- 1 Tbsp. lemon juice
- 1 tsp. cayenne pepper
- 1 tsp. sugar
- 1/2 cup olive oil, or a canola/olive oil mix
make it
In small bowl, combine mustard, vinegar, lemon juice, cayenne pepper, and sugar. Whisk all ingredients until well mixed. Add oil a little at a time, whisking the whole time, cover, set aside.
Wash and trim 4 medium-sized cabbage leaves. Drain well, pat dry. Leave cabbage leaves whole to be used as a serving container for salad mix. Combine all diced veggies, toss with vinaigrette.
Place 1 cabbage leaf on each salad plate, spoon veggies into leaf and garnish with chives and parsley.
