Sherry's Holiday Sweet Onion-Sourdough Stuffing

what you need
- 2 medium leeks, trimmed, chopped
- 1 large shallot, peeled, chopped
- 1 cup sweet onions, chopped
- 3 Tbsp. butter, divided
- 1 Tbsp. canola oil
- 8 cups day-old sourdough bread, cut into 1/2-inch cubes, toasted
- 1-1/2 cups fat-free chicken broth
- 2 cups halved seedless red grapes
- 1 Tbsp. chopped fresh sage

Preheat oven to 350°F. In skillet over med-low heat, cook chopped leeks, shallots and onions in 1 Tbsp. butter and oil, cook for about 40 min.
In bowl, gently toss onion mix and last 4 ingredients, spoon into a 13 x 9-inch baking dish that has been sprayed with cooking spray. Dot with remaining butter, cover.
Bake 30 minutes. Uncover and bake 10 more minutes or until golden brown.
