Sherry's Turkey-Chorizo Chili

what you need
  • 1 large onion, peeled and chopped
  • 4 oz. chorizo sausage, chopped
  • 1 small zucchini
  • 1 small yellow squash, chopped
  • 2 Tbsp. canola oil
  • 1 lb. cubed, cooked turkey
  • 1 Tbsp. chili powder
  • 2 cloves garlic, chopped
  • 2 cans (14.5 oz. each) petite diced tomatoes with jalapenos
  • 1 can (15 oz.) cannellini beans, rinsed, drained
  • Breakstone's Sour Cream
  • Kraft Shredded Cheddar Cheese
  • Sliced black olives
make it
In saucepan over med-high heat, cook onions, sausage, zucchini and yellow squash in oil for 5 minutes.

Stir in turkey, chili powder and garlic. Cook for 2 min.

Add tomatoes and beans. Bring to a boil, reduce heat to medium, simmer for 5 min.

Garnish with Breakstone's Sour Cream, Kraft Shredded Cheddar Cheese and sliced black olives.
Notes
I serve these with a quick corn muffin mix, baked while the chili cooks. Excellent fast dinner.
