Roasted Red Potatoes with Herbs

what you need
  • 6-8 small red potatoes, quartered
  • EVOO (Extra Virgin Olive Oil)
  • 1 teaspoon each: dried parsley, sage, rosemary, and thyme
  • Salt to taste
make it
Preheat oven to 425°F.

Coat potatoes in a thin layer of EVOO. Sprinkle with spices and toss potatoes.

Roast in oven for 20-25 minutes until golden brown on potatoes' edges.
