Sherry's Shrimp, Tomato and Feta Bake

what you need
- 2 Tbsp. canola/olive oil mix
- 4 garlic cloves, minced
- 1/2 cup fresh parsley, chopped
- 4 tsp. oregano
- 1/2 tsp. crushed red pepper flakes
- 4 Tbsp. tomato paste
- 1 can (14-1/2 oz.) Italian-style diced tomatoes, drained
- 2-1/2 cups fat-free chicken broth
- Salt and pepper to taste
- 28 jumbo shrimp, peeled, deveined
- 1 cup grape tomatoes, cut in half
- 6 oz. reduced-fat feta cheese, cubed
- 3 cups cooked rice pilaf

Preheat oven to 450°F. In large skillet over med heat, add oil. Add garlic, parsley, oregano and red pepper flakes. Saute for 3 minutes. In large bowl, combine garlic-red pepper mix, tomato paste, diced tomatoes, chicken broth, salt and pepper. Mix well.
Spray a baking dish lightly with cooking spray. Transfer contents of bowl to baking dish. Spoon shrimp, grape tomatoes and feta cheese over mix.
Bake for 20 minutes or until shrimp are opaque in center. Serve over rice.
Notes
Quick, easy full of flavor dish. you can serve with any rice, but it taste great with the pilaf. You can also serve it without rice, and instead serve with crusty bread.
