Sherry's Holiday Easy Honey-Whipped Sweet Potatoes

what you need
- 2 Tbsp. butter
- 1 large onion, chopped
- 3 Tbsp. honey
- 1 can (40 oz.) + 1 can (16 oz.) sweet potatoes in light syrup, drained
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. Chinese five-spice powder

Preheat oven to 350°F. Coat a 1-1/2 qt-baking dish with cooking spray. In large skillet, melt butter over medium heat. Add onion, cook, stirring occasionally until just starting to brown. Reduce heat to med-low. Stir in 2 Tbsp. honey, cook, stirring, until onion is golden, about 5 min.
In bowl, with mixer on med-high speed, beat sweet potatoes with salt, pepper, spice powder and remaining 1 Tbsp. honey until smooth. Reserve 2 Tbsp. onion mix. Stir remainder onion mix into potato mix. Transfer to baking dish.
Bake until heated through, 20-25 minutes. Serve topped with remaining onion mix.
