Sherry's Holiday Apple-Cranberry Pie

what you need
  • 1 cup + 1 tsp. sugar, divided
  • 2 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 3 lb. granny-smith apples, peeled, cored, thinly sliced
  • 1/2 cup sweetened, dried cranberries
  • 1/4 cup honey
  • 1 Tbsp. lemon juice
  • 1 already pie crust
  • 1 egg, beaten
make it
Place foil-lined jellyroll pan on rack in center of oven. Preheat oven to 350°F. In large bowl, combine 1 cup sugar, cornstarch, salt and cinnamon. Add apples, cranberries, honey and lemon juice. Toss until well combined.

Coat 9" pie pan with cooking spray. Fit one sheet of dough into pan, flute. Transfer apple mix to pie shell. Place 2nd sheet of dough over filling, flute edges. Brush dough with egg. Foil the edges of pie for 1st hour. Sprinkle top of pie with remaining sugar.

Bake on hot jellyroll pan for 1 hr, 30 min, or until bubbly and golden. Cool 20 min.
