Sherry's Asparagus-Shallot Toss

what you need
- 2 lb. asparagus, trimmed
- 1 bunch radishes, trimmed, quartered
- 3 Tbsp. olive oil, divided
- 2 shallots, peeled and chopped
- 1/4 cup chicken broth

Preheat oven to 400°F. In large bowl, gently toss asparagus, radishes and 2 Tbsp. of oil.
Spray a jelly roll pan with cooking spray. Arrange veggies in pan. Season with salt and pepper. Roast 35 minutes, stirring once.
In saucepan, over medium heat, cook remaining oil until heated. Add shallots, cook 4 min. Add broth, bring to boil. Cook 2 min. Remove from heat. Arrange veggies on platter, top with shallot mix.

Very simple, yet it has wonderful combinations of tastes.
