Sherry's Cheesy Onion Tartlets

what you need
- 1 onion, chopped
- 1/2 tsp. dried thyme
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- 1 refrigerated ready pie crust
- 2 eggs, slightly beaten
- 1/2 cup heavy cream
- 1/2 cup crumbled stilton cheese
- 1 small red pepper
- 1 Tbsp. chopped fresh or dried parsley

Preheat oven to 350°F. In skillet, over medium-low heat, cook onions, thyme and salt in oil for 20 min or until golden brown, stirring occasionally.
Using a 2-1/2" round cookie cutter, cut 24 rounds from pie crust. Spray a 12-well mini-muffin tin with cooking spray. Place 1 round in each well. Use a fork to pierce bottoms. Chill 10 min, cook 10 min.
In bowl, combine eggs, cream, cheese and onion mix. Divide batter among shells. Bake 15 minutes. Top with red pepper and parsley.
