what you need
  • 10 sun-dried tomato halves (not oil packed)
  • 2 cups low-fat baking mix
  • 1 pkg. (8 oz.) low-fat feta cheese, crumbled, divided
  • 3/4 cup skim milk
  • 3/4 cup roasted red bell peppers, finely chopped (from a 7 ounce jar)
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1 Tbsp. olive oil
  • 1 garlic clove, finely chopped
make it
Preheat oven to 425°F. Lightly spray a square 9x9x2 inches pan with cooking spray. Cover dried tomatoes with boiling water, let stand 10 min, drain, finely chop.

In large bowl, stir tomatoes, baking mix, half the cheese, all the milk until dough forms. Stir, in another bowl, the remaining cheese, bell peppers, oregano, basil, oil and garlic.

Drop half of the dough by tablespoonfuls close together in irregular pattern in pan. Spoon 1/2 the cheese mix over dough. Drop remaining dough over cheese mix. Top with remaining cheese mix. Bake for 20 min or until golden. Serve warm.
Notes
This is a delicious meal itself if served with a salad. Or serve as an appetizer along with a pasta dish.
