Apricot-Ginger Stuffed Pork Tenderloin

what you need
- 1 box Stove-Top Stuffing, prepared according to package
- 1 Tbsp. minced crystallized ginger
- 2 pork tenderloins
- Oil for browning tenderloins
- 1/4 cup Dijon mustard
- 3/4 cup apricot preserves
- 2 tsp. minced fresh ginger
- 1 clove garlic, minced
- 2 tsp. lemon juice
- 1/4 tsp. salt
- For accompanying sauce:
- 1 cup plain yogurt
- 1 clove garlic, minced
- 2 Tbsp. minced mint
- 2 Tbsp. honey
- 1/4 tsp. salt

Preheat oven to 425°F. Prepare Stove Top Stuffing and mix in crystallized ginger. Set aside.
Cut a hole through center of tenderloins and stuff with Stove Top/ginger mixture. Heat oil in frying pan on high. Sear tenderloins on all sides until brown. Set aside.
Mix all remaining ingredients together and spread on tenderloins. Place tenderloins on baking sheet covered in parchment paper.
Bake approximately 18 minutes - until inside reaches 160 degrees F on instant read thermometer. Accompany with the yogurt sauce: mix all ingredients together and chill until time to serve.
Notes
This goes really well with couscous. Mix some fresh chopped mint into the couscous for extra flavor!
