Mozzarella and Tomato Tarts

what you need
- 1 pkg. (15 oz.) refrigerated pie crust dough
- 12 small fresh mozzarella cheese balls
- 12 cherry tomatoes, cut in half
- 1 cup light cream
- 2 eggs
- 1/2 tsp. minced fresh thyme
- 1 Tbsp. chopped fresh basil

Preheat oven to 400°F. Roll out each pie crust to 12" round. Cut out 4 5-1/2" rounds. Spray 4 tartlet pans with cooking spray. Arrange rounds in tartlet pans, with removable bottoms. Trim excess dough. Using a fork, pierce bottom of dough 4 times.
Divide cheese balls and tomatoes evenly among pans. Place pans on baking sheet. In bowl, whisk together last 4 ingredients, divide mix among pans.
Bake 25 minutes or until set.
Notes
These are great appetizers, or serve as a meal with a salad.
