Spinach Ravioli with 3-Cheese Sauce

- 1 pkg. (15 oz.) spinach ravioli
- 1 red pepper, seeded and sliced
- 1 green pepper, seeded and sliced
- 1 yellow pepper, seeded and sliced
- 3 Tbsp olive oil, divided
- 1 large onion, chopped
- 2 tsp. minced garlic
- 1-1/2 tsp. dried Italian seasoning
- 2 cans (14.5 oz. each) diced tomatoes with herbs
- 3 cups Kraft Shredded Italian 3-Cheese Blend, divided

Preheat oven to 400°F. Cook ravioli as directed, set aside. In large pot over medium heat, cook peppers in 1 Tbsp. oil for 5 min. Remove peppers, set aside. In same pot, cook onions, garlic and Italian seasoning in remaining 2 Tbsp oil until onions are soft. Add tomatoes. Increase heat to high. Bring to boil. Reduce heat to low. Let simmer 20 min, stirring occasionally. Stir in peppers.
Spray a casserole dish with cooking spray. Spoon 1 cup tomato mix into bottom of baking dish. Evenly layer 1/2 the ravioli, 1-1/4 cups tomato mix, and 1 cup Kraft Cheese. Top with remaining ravioli and tomato mix. Sprinkle remaining Kraft cheese evenly over casserole. Cover with foil.
Bake 20 minutes.
Notes
So delicious, especially with some homemade garlic bread.
