Spinach Salad with Maple-Mustard Dressing

what you need
- 6 cups baby spinach
- 1 cup shredded carrot
- 2 cups thinly sliced red cabbage
- 1/3 cup cider vinegar
- 1/4 cup plus 1 tsp. pure maple syrup, divided
- 1 tsp. coarse Dijon mustard
- 3/4 tsp. salt
- 1/4 tsp. pepper, divided
- 8 slices Oscar Mayer Bacon, diced
- 1 Tbsp. canola oil
- 3/4 cup chopped red onion

In large bowl, toss spinach, carrot, and cabbage. In glass measuring cup, whisk together vinegar, 1/4 cup syrup, mustard, salt, and 1/8 tsp. pepper.
Cook bacon in large skillet over medium heat until crisp. Drain on paper towels. Remove and discard drippings. Reserve skillet. Brush bacon with remaining 1 tsp. syrup, sprinkle with remaining pepper.
Heat oil in same pan over med-high heat. Cook onion 2 min. Stir in vinegar mix, simmer 1 min. Pour warm mix over spinach mix, toss to coat well. Sprinkle with bacon.
Notes
This is so delicious; it's a meal unto itself.
I also sometimes add mushrooms, which gives it a nice fresh taste.
