what you need
- 8 oz. Italian sausage links
- 1 pkg. (1 lb.) frozen mixed pepper stir-fry, thawed, drained
- 1 jar (24 oz.) marinara sauce
- 1 container (15 oz.) ricotta cheese
- 1 pkg. (8 oz.) Kraft Shredded Mozzarella cheese, divided
- Salt & pepper
- 1 pkg. (12 oz.) jumbo pasta shells, cooked, drained
make it
Preheat oven to 350°F. Coat a 3-quart baking dish with cooking spray. Coat a skillet with cooking spray. In skillet over medium heat, cook sausage until browned, 12 min. Cool, cut into 1/4-inch thick slices.
In same pan over med-high heat, cook pepper stir fry until browned. Remove 1/2 cup of pepper stir fry. To remaining peppers, add marinara sauce, 1/2 cup water and sausage. Cook until sausage is cooked through.
Spread 1/2 cup sauce mix in baking dish. Chop reserved peppers. Mix with ricotta, 1-1/2 cups Kraft mozzarella cheese, 1/4 tsp. salt and 1/4 tsp. pepper. Spoon into shells. Place shells in dish. Top with remaining sauce mix. Cover, bake 40 min. Uncover, sprinkle with remaining mozzarella cheese. Bake until melted, 5 min.
Notes
Very cheap, but filling dish.
