Sherry's Lemon Pork Stir-Fry

what you need
  • 1 Tbsp. cornstarch
  • 1 pork tenderloin (2 oz.), halved lengthwise, cut crosswise into 4" thick slices
  • 2 tsp. olive oil, divided
  • 12 oz. bok choy, quartered
  • 1 green bell pepper, cut into strips
  • 1 cup shredded carrots
  • 2 Tbsp. stir-fry sauce
  • 2 Tbsp. water
  • 1 tsp. lemon zest
  • 1 Tbsp. lemon juice
make it
Sprinkle cornstarch over pork, coat well. Heat 1-1/2 tsp. oil in skillet over medium heat. Add pork, cook 4 min. Remove from heat.

Heat remaining oil in skillet. Add bok choy, pepper, carrots, and cook 4 min.

Add pork and other ingredients. Toss and cook until heated through.
