what you need
- 1 Tbsp. cornstarch
- 1 pork tenderloin (2 oz.), halved lengthwise, cut crosswise into 4" thick slices
- 2 tsp. olive oil, divided
- 12 oz. bok choy, quartered
- 1 green bell pepper, cut into strips
- 1 cup shredded carrots
- 2 Tbsp. stir-fry sauce
- 2 Tbsp. water
- 1 tsp. lemon zest
- 1 Tbsp. lemon juice

Sprinkle cornstarch over pork, coat well. Heat 1-1/2 tsp. oil in skillet over medium heat. Add pork, cook 4 min. Remove from heat.
Heat remaining oil in skillet. Add bok choy, pepper, carrots, and cook 4 min.
Add pork and other ingredients. Toss and cook until heated through.
