Shara's Cheesy Stuffed Potato Skins

what you need
  • 5 large baking potatoes
  • 3 Tbsp. 1% milk, heated
  • 2/3 cup Kraft Shredded Cheddar Cheese, divided
  • 1/2 cup light sour cream
  • 1/2 cup sliced scallions
  • 2 slices cooked bacon, crumbled
make it
Preheat oven to 400°F. Wrap each potato in foil. Cook for 45 min. Quarter potatoes lengthwise. Remove pulp, leaving a 1/2" border.

In large bowl, blend potato pulp, milk, and 1/2 cheese.

Spoon into potato skins, top with remaining cheese. Top with sour cream, sliced scallions, and crumbled bacon.
Notes
These are my daughters' favorite potato skins.
