what you need
- Seasoning Mix:
- 1 tsp. chili powder
- 1 tsp. paprika
- 1 tsp. black pepper
- 1 tsp. red pepper (cayenne)
- 1 Tbsp. oregano
- 1 Tbsp. cumin
- 1 lb. ground beef or ground turkey
- 1 can (28 oz.) crushed tomatoes (I used diced)
- 1 can (28 oz.) tomato sauce
- 2 medium onions (I didn't use)
- 1 jalapeno pepper, cored and seeded, finely minced (I cut it up into small pieces)
- 2 cloves garlic
- 2 cans (16 oz. each) corn, drained
- 2 cans (16 oz. each) black beans, drained and rinsed (I used black beans with jalapeno peppers)
make it
Mix seasonings together.
Brown beef or turkey, place in colander and rinse with hot water to remove excess fat, return to pot.
Add seasoning mix and all other ingredients except corn and beans. Simmer for 2 hours (I just put it in a crock-pot on low).
Add beans and corn during last 20 minutes of cooking.
Notes
Can be cooked in crock-pot on low for 6-8 hours.
