Roasted Tomato Salad

what you need
  • 1/2 cup Italian dressing, divided
  • 4 cups grape tomatoes
  • 4 cups broccoli florets
  • 1/2 cup thinly sliced red onion
  • 8 cups baby spinach leaves
make it
Preheat oven to 400°F. Line pan with aluminum foil. Combine 2 tablespoons Italian Dressing with tomatoes in pan. Shake to coat. Roast 15 minutes or until tomatoes are tender and just beginning to burst.

Meanwhile, combine broccoli, onion and 2 tablespoons of dressing in a large bowl; set aside.

Arrange spinach on a serving platter. Top with broccoli mixture, and warm tomatoes. Just before serving, drizzle with the remaining 1/4 cup dressing.
