what you need
  • 2 eggs
  • 3/4 cup milk
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 teaspoon each salt, garlic powder & paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 lb. fish fillets
  • Oil for frying
  • Lemon wedges, optional
make it
In a shallow bowl, beat eggs & milk until foamy. In another shallow bowl, combine the flour, cornmeal and seasonings.

Dip fillets in eggs, then coat with cornmeal mixture.

Heat 1/4 inch of oil in a large skillet; fry fish over medium-high heat for 3-4 minutes on each side or until fish flakes easily with a fork.
Notes
Sometimes I use 3/4 cup buttermilk instead of egg wash if I have on hand.
