Pork Chops with Raspberry Sauce

what you need
- 4 to 6 boneless pork chops
- 2 tsp. garlic salt
- 1 tsp. black pepper
- 2 Tbsp. olive oil
- 1-1/2 cups chicken broth
- 1/2 cup seedless raspberry jam
- 2 Tbsp. Dijon mustard
- 1 Tbsp. cold butter
- 2 Tbsp. chopped flat leaf parsley
- 1/4 cup fresh raspberries

Season chops with garlic salt and pepper. Heat oil in a large skillet. Brown pork chops on both sides over medium heat until pork is cooked through. Remove to a plate and cover with foil.
Add broth to the same skillet. Bring to a simmer, scraping up brown bits. Whisk in jam and mustard. Cook for a minute or two. If sauce is to thick add a little water or more stock.
Turn off heat and whisk in cold butter. Add parsley. Serve on top of chops. Garnish with fresh raspberries.
