This is my new "go to" recipe! I made it for the first time today and LOVED IT! Easy, quick,very light and fluffy. The hardest part of the recipe is waiting for the muffins to cool off so you can eat them. Amazing!

very easy to make. didnt use muffin cups. they came out great. will try with mandarin oranges
