Light and fluffy! I exchanged 1 c. wheat flour for white, threw in a handful of oatmeal. Served w/ syrup or a little PB w/ sliced bananas and a drizzle of syrup. Delicious! I made a bunch to freeze for my kids' breakfast.

Pancakes have been a favorite of mine for as long as I can remember. My dad's are to this day the best I've ever had (though I'm, they litterally look like the pancakes you see on the front of boxes or in commercials, so it's hard to find pancakes that compare. These pancakes ARE very good however. I work in a restaurant, and pancakes are supposed to be fluffy and light, if you don't like them that way, then you alter the recipe to suit yourself. I didn't make any major changes. I was out of oil, so I melted butter and used that. I also added a teaspoon of vanilla when mixing the wet ingredients. I also greased my griddle w/ butter after every pancake. Mine were not rubbery at all, and were actually very light and had a great taste. I did not and will not change the amt. of baking powder. I def. recomend these.
