This was so great! My husband and daughter absolutely loved it and it was so easy!! I added some sharp cheddar instead of regular cheddar and used spicy doritoes to give it a zing, although the ro-tel tomatoes did a great job of that. I didn't feel it needed any mexican spices.

This was very good. However, I added ground cumin and cilantro leaves to add just a bit more Mexican flavor.
