My family and I just love this dish. I have made it a few times. Instead of using split chicken breast, I used 2 boneless breasts that I cut into strips to brown and then into bite sized pieces to simmer. I also used a fresh diced red pepper instead of the roasted pepper and I have made it with and without the chorizo. Delicious either way. Recipe is definitely a keeper!
