Growing up, I remember going to my grandparent’s house for Easter brunch and looking forward to all of the delicious foods we would enjoy there. From egg bakes to Easter dessert, there was something for everyone in my mom’s large extended family to enjoy before we headed out to hunt Easter eggs. Regardless of what’s on your Easter menu, there’s always room for one more adorable mini dessert.

An easy, colorful dessert like this one would have fit right in on Grandma’s counter. Mini Key Lime Tarts are a fun way to add a little spunk to your Easter dessert table. Made in a store-bought graham cracker crust, JELL-O Instant Pudding Mix makes these tarts simple to put together. The key lime pudding is the perfect backdrop for green tinted coconut and a few jelly beans.
