Kimberly Schiffel – Bake Love Give
One of my absolute favorite Easter traditions has always been the elaborate baskets carefully curated by my sweet family. When I was much younger I remember driving to visit my granny in Louisiana to celebrate Easter. The baskets opened in her home are some of my fondest memories as a child even if their exact contents have been long forgotten.
As the years go by, my family still ships out an annual Easter package complete with all of my favorite seasonal treats. In addition to the standard chocolate bunnies and jelly beans, they send box mixes for baked goods from some of my favorite local establishments back home in Texas. Every year I look forward to seeing the seasonal eats that arrive just in time for an Easter feast of home-baked goods and nostalgic sweets.
As much as I love receiving thoughtful Easter baskets, I enjoy gifting them even more! I put together my own baskets of sweets and treats to spread one of my favorite traditions throughout the homes of my sweet friends. Homemade Easter Desserts are a must and these Carrot Ginger Loaves with Ginger Cream Cheese Frosting were the star of this year’s baskets.
This recipe yields three mini loaves perfect for gifting or one standard size loaf for sharing with your family over a weekend brunch. The PHILADELPHIA Cream Cheese Frosting is spicy and sweet thanks to the addition of fresh ginger and the carrot cake is delightfully moist and flavorful. Whether filling grown up Easter baskets or sharing with the kids, the entire family is sure to enjoy these Carrot Ginger Loaves with Ginger Cream Cheese Frosting.
