Broccoli and Pasta Salad for Large Gatherings

Spring is Here!


Yay for Spring!  It’s almost time to start outdoor gatherings and celebrations, barbecues, block parties and family reunions.  Graduations, Mother’s Day and Memorial Day mean that the month of May is jam-packed with opportunities to gather for family picnics, too.  Church socials often move outdoors with the nicer spring weather, as well.  Whatever the event we’re attending, I always try to prep larger batches of food than I would typically fix for just a meal at home, so we have plenty to share with all our friends, guests or extended family members.  This tasty broccoli salad is loaded with veggies and packed with flavor that your family and guests will love.  It’s super simple to prepare and makes enough to feed a crowd as a side dish.  Toss in some chicken and a can of garbanzo beans and you could serve it as a main dish, too!

Vegetable salads are one of my favorites because they are so versatile and lend themselves easily to substituting different veggies. I tossed together fresh broccoli, fresh parsley, red onion, bell pepper, sharp cheddar cheese, bacon and sunflower seeds for this scrumptious side dish.  The dressing for my Broccoli and Pasta Salad is made with KRAFT MIRACLE WHIP, plain yogurt, some sugar and wine vinegar.  I typically prepare the dressing with red wine vinegar, which gives the dressing a pink hue; but today, I had gorgeous fig vinegar that I substituted and it was divine, so get creative and use YOUR favorite sweet wine vinegar. I usually have red bell peppers on hand and would have used that, as well, but went with yellow, today, because that’s what I had in my fridge.  Use this recipe as a starting point to customize and create your own unique broccoli and pasta salad.
