Did you know that April is National Grilled Cheese month? I just found out myself and I have to say, it’s one of the food holidays that excites me. The grilled cheese sandwich was the very first thing my dad taught me to cook on the stove, although his were always better than mine. It’s also the first thing I taught my own son to cook. I like to think there’s a little family tradition to be passed down through the generations because of that simple sandwich.
There’s also a lot more to a grilled cheese sandwich than slapping some cheese between two slices of bread and frying it in butter. While I do love the simple version dipped in a warm bowl of tomato soup, I also love coming up with flavor combinations to keep it interesting.
In honor of my pizza-loving son, I came up with a pizza grilled cheese sandwich! Mine is filled with my favorite pizza toppings including: pepperoni, grilled bell peppers, black olives and mozzarella cheese perfectly paired with a side of marinara sauce for dipping. But that’s the great thing about this sandwich and pizza; you can mix up the toppings to include all of YOUR favorites.
