Hello friends! June is one of my favorite months. The sun is shining, the farmers’ markets are open all over NJ, and BBQs are happening everywhere you turn. Growing up, I was always in charge of “dessert” when it came to family parties and cookouts. When I was little, this meant making banana bread from a box or some kind of other cake mix dessert. However, as I got older and learned how to bake from scratch, my new go-to favorite for summer cookouts became Fruit Pizzas.
Basically, it’s a sugar cookie you cover in a luscious cream cheese frosting and top with your favorite fruit! It’s simple, eye-catching, and a major crowd pleaser. Who doesn’t want to have a slice of dessert pizza?!
The answer: no one.
I went with a tropical theme for this fruit pizza, using a packet of KOOL-AID Tropical Punch Drink Mix to flavor the PHILADELPHIA Cream Cheese frosting, and finishing my “pizza” with toppings like toasted BAKER’S ANGEL FLAKE Coconut for “cheese” and sliced strawberries for “pepperoni “.
Take just one bit of this fruit pizza and you will be whisked away to sunny, tropical shores! Like I said, it’s a major crowd pleaser for BBQs, summer birthdays, and potlucks. Trust me, once you try this version, you’ll be whipping up fruit pizzas with all different kinds of fruit combinations for every occasion!
Oh, and if you’re short on time, you can just use your favorite store-bought cookie dough to make the “crust”. I like to make mine from scratch, but I’ve been in those moments when you need a dessert quickly and don’t have time to let from-scratch dough chill in the fridge for an hour.
Might I suggest a “red, white, and blue” version, complete with fresh blueberries, strawberries, and raspberries for the 4th of July? 😉 The delicious possibilities are infinite!
