The trick to a moist, tender grilled chicken? Brining. Whether you’re grilling chicken breasts, thighs or wings, our recipe for Lemon Herb-Brined Chicken keeps your meat juicy during grilling and adds flavor.
How to grill juicy chicken:
- Remove skin from all chicken pieces except wings. Add all pieces to a resealable plastic bag; place in a shallow dish.
3. Pour over chicken. Seal bag and put in the fridge overnight.
4. Remove chicken from brine mixture and discard mixture. Pat chicken dry with paper towels and let stand for 20 minutes. Meanwhile, heat grill to medium-high heat. Grill chicken two minutes on each side. Then reduce heat to medium, and grill chicken 8 to 18 minutes until done (165°F), turning occasionally. How to tell the internal temperature? Insert a food thermometer into the thickest part of the chicken piece, avoiding any bones.
