Casseroles: They’re the favorite pair of jeans of my weeknight recipe collection. Dress them up, dress them down—they work for (almost) every occasion, all year long. In the summer, I like to work in fresh veggies like the eggplant and zucchini in the Italian Veggie Bake above, and tomatoes and peppers in the Mexican Chicken Casserole below. Then again, classic Creamy Tuna Noodle Casserole is just too good not to make year-round.
