I am fortunate enough to get to dine at some of the finest restaurants out there, and lately I have been finding the chefs featuring melons, especially watermelon, in their salads. With summer providing a bounty in our gardens and in the fresh markets, we have been having a virtual field day with salads: tomatoes and cheese, your typical garden salad and this, quite possibly the best summer salad ever, Cucumber Melon Salad. I took inspiration from those restaurants and combined some baby greens (like spinach and peppery arugula) with the crunchy cucumbers, fresh mozzarella and sweet watermelon. Over this dressing and a bit of chopped basil, rendering a burst of flavor and texture in every delectable bite. It has been a true hit for us, give it a try!
