Tomato Overload!

There is almost no more intoxicating a smell than freshly picked tomatoes off of our backyard vine, and my family waits anxiously all summer for the opportunity to dig into juicy, sun-ripened tomatoes. Finally, they arrive in our garden…and then they just keep coming! And we love it. Almost all of our dinnertimes between late July and September include ripe tomatoes.

Even if you’re not lucky enough to have a little tomato factory in your backyard, you’ll find the flood of tomatoes at the market driving down prices. There’s never been a better (or more cost-effective) time to enjoy some of our faves.

Easy “Baked” Tomatoes: These are our simplest, most appealing summer side. Preserve the delicious flavors of vine-ripened tomatoes with a pinch of Parm and a splash of balsamic.

Rustic Tomato Tart: All the flavors of a BLT come together with the added bonus of savory pie crust and ooey, gooey, cheesy goodness. A summer entrée that will make a definite splash with your potluck peeps.

Heirloom Tomato Salad: A hearty salad that celebrates the best summer has to offer, with fresh tomatoes, chopped basil and crumbled feta.

SURE.JELL Tomato Relish: So easy, you won’t believe you haven’t already done this. Preserve your bumper crop of tomatoes with this relish recipe, featuring a zing of lemon zest. We have a spicy version, too, if you think your fall is gonna need a little kick.

Tomato Pie: While blueberry reigns at the beginning of summer, savory tomato pie is the clear winner of August. This version has fresh tomatoes, chopped onions, basil and a generous helping of melty cheese to make a main totally worthy of Meatless Monday.
